Anyone think this will work? I can see this being an injury waiting to happen too because of nothing to hold onto.

no. It's a gimmick. You would be better off spending your time walking (outside - not on a treadmill) or riding a bike.

My fiance had one of those for a while, she loved it but I'm pretty sure you'd be better off just doing some plyo.

No way in hell.
If you need to avoid impact exercises, and you actually want something that works, get a versaclimber or a cheap knockoff. They're not cheap, but they actually do something. Even those will get too boring after a few weeks....do p90 or insanity.
Better yet, just go find a crossfit gym....it will change your life.
