Since you said "who would you take" I'll answer Williams. If you would have asked "what would you do" I would say try to pull a Roy Williams and trade down a couple of spots.
If there is more than one guy available that you like when you are on the clock the smart thing to do is trade down. The only problem with your initial question is that around half the possible answers you provide will be gone by then.

BTW: Are we not participating in the daylight savings program?

No way was he over rated. It shows you how good he must be to keep talented WRs on the bench.

In the championship game against Michigan they hardly threw to him. Decoy, or maybe they had other weapons (Colbert)?

Hellow fellow Cowboy fans...first post here...my opinion is that if all of those players are available at 11 you trade down and target Merriman because:
1. He can fill in at DE this year
2. He can fill in at LB this year in the 4-3 and 3-4 sets this assuming the Cowboys pick up another DE in the middle rounds, for example Jovan Haye or Chris Canty
3. If the Cowboys do go to a 3-4 he will be an awesome addition
However, if a trade down is not possible you have to take the best player (Williams) and pray Merriman is there at 20 or trade to get him

I'd take Spears with the belief that an tweener outside pass rusher will be there at #20 or #42 between Pollack/Roth/Tucker/Ware/Blalock.

Man, I take Mike Williams and then say a prayer of thanks because he was there. Tags would get a paper cut getting that card to him so fast.
