Did you know there are only 5000 Snow Leopards in the wild now and they are confined to Central Asia? However, the effective global population (those likely to reproduce) is less than half that number.

Great day to stay in. Looks like slow rain all day and lot's of football on tap. One of the local grocery stores in town has taken to making fresh guacamole on the weekends for football games and it's really good. Got a nice supply last night and fresh chips. Going thru my last tamales from Tellez tamales in San Antonio, which we loaded up on last winter when we were in SA! Bring on the games!!!
Speaking of games, was following my alma mater yesterday evening on BSPN scoreboard, as the fightin' Bearkats of Sam Houston State were playing Eastern Washington for the right to meet N. Dakota in Frisco,Texas in January for the FCS National Championship. It was on ESPNU, but we didn't get it here. Anyway, I found out the halftime score was 35-0,SHSU! Final was 45-42, SHSU, who barely hung on after leading by 35! Talk about going into a prevent defense.....that almost prevented them from winning. Gotta give Eastern Washington a lot of credit.
Sam was rated about the 5th or 6th seed because of three losses this year. They played about 7 or 8 games on the road, and two of them were against Baylor.....and Texas A&M after A&M had beaten Alabama. Of course Johnny Football did his thing, even trying to kick a PAT. That's sorta rubbing it in.
Ought to be interesting in Frisco on January 5th! Darn tickets are starting at around $200. We'll be in Texas then, but the temptation to go is offset by the bucks to get in.

Morning Pops. Morning to all of the regulars who keep this thread alive. Good morning to any who may drop in.

Spent most of yesterday making Tamales as a matter of fact. Made a little over 15 Dozen. Made Red Chile Pork, which of course is simply marinated pork in Red Chile. Secret there is who you make the Red Chile. We do it the old fashioned way. We soak red chile pods in water overnight, then boil them, blend them into a sauce and then cook them over the flame, adding seasonings. Once that's done, you add it to the pork. Of course, you have to slow cook the pork until it's tender enough to come apart with a fork.

Also made Green Chile Chicken. There, you boil the whole chickens in a pot, add seasoned, chopped Green Chile. Of course, we use fresh Green Chile (which we roasted, peeled and packed earlier in the year), the boiled chicken comes right off the bone, shred the chicken, combine the chile and more seasonings and your there, we do add cheddar or longhorn cheese.

The third kind was something I've never tried before. Really simple, just take whole Green Chilies, that have already been roasted and pilled, season them and stuff them with Cheese. OMG, these turned out soooo good.

We don't make our own Masa anymore, we buy it in bags we get from a place here in town, either El Modelo or Albuquerque Tortilla Factory. Soak your husks, take the Masa, spread it over the husks with a spoon and then fill it with either the Red Pork, the Green Chicken or the Stuffed Green Chile Cheese. Roll them up and then you put them in a huge pot called a steamer. Steam them for about 50 minutes to an hour, let them cool a bit and your done. We freeze them so we have them when we want them.

They are really good and it's a nice thing that my Wife and all the kids and even our friends sometimes do. It's just a tradition that we do as a family that also produces some good eats. Maybe one day, our kids will do the same with there families. Good stuff.

Great recipes,ABQ! I may have to try that. I think it's a tradition in the southwest and Mexico for the family to get together this time of the year and have a "Tamalada", or tamale making get together.
