When both my little brothers asked me to learn to cook I told them to master braised short ribs. Great way to learn technique, flavor building, mix of ingredients and several other ways of plating.

The downside is the secret is out so the price of shortribs have gone up/harder to find these days.

You're not kidding about the price. I paid almost $28 for 5 average sized ribs, maybe 1.25 lbs.

That's absurd. Not far off the cost of prime ribbeye and probably about .33lbs of that is bone assuming you got English cut.

They have gotten very expensive at my grocery store which is why I prefer to make Osso Buco if I can find veal shanks. The cooking process is almost identical. But my wife has an issue eating veal because of the way they raise the baby cows so I make short ribs instead.

I'll have either a tuna salad sandwich or the last half of a Subway Turkey and Ham Sub that I had for lunch. Then, it'll be the Battle of the Injured, Dinged and Generally, Beaten-Down Teams at 7:00 p.m. Central. May the most desperate and determined team win and march on to glory! :)

Au contraire, bon ami, a sammich can be fancy and sexy.

I am having a Hot Sicilian (and a sammich) which is Serrano Ham, Salami, Capicola, hot and sweet, pepperoni, bacon and provolone on a big Kaiser heated in the over with Dijon and McClure's pickles and chips. You bite this sammich, it bites back and some of that hot Capicola and pepperoni sweat runs out on your hands and you're thankful you're alone and can just lap that up. I have noticed that there are several involuntary audible grunts of satisfaction that accompany this masterful sammich.
Bacon?!?! On a sandwich like that....I got Guido, Tony and Carmine here ready to pay you a visit. ; )

Try prosciutto instead of the pepperoni and bacon and maybe a little tomato, oil and vinegar and put that on a hero, mmmmm

But yeah that sounds good.

But yeah that sounds good.
LOL, bacon is on the original from Nick Cantone's in PA but I have experimented and haven't beat the taste of that sammich and can recall the first time I ever bit into it, it was magical.

Makes a hell of a salad too, tossing some Kalamatas and pepperoncini and hitting that with some homemade Italian dressing and freshly grated Parm and Romano.

On the road in Corpus for work today so will be watching from hotel room…..no DVR etc…..probably getting a filet at Outback right next door. And a sixer of Ultra of course.
Amazon Prime is broadcasting if you have that as an option.
