Wings

Baked 425 for 1 hour. Then absolutely swimming in Franks Buffalo (fat free!) for 20 minutes or so, covered, maybe with a little heat. Wings might seem a little overcooked at first, but get tender with time in sauce. Can't use too hot/spicy a sauce, or it will limit the amount you can use. Almost as good as, but a lot healthier than fried with butter type sauce.
I make them keto superfood style.
drench in avocado oil, season with a poultry mix, cook on smoker for ~2 hours, turn up heat to ~400 for 10-15 mins to crisp skin.
toss in franks red hot and let sit for 20-30 minutes.
eat with ranch and raw veggies.

I usually do a beer can chicken at same time to send to my folks.

I've tried saucing before I smoke but meat doesn't taste as good to me.
Eaten them without saucing a lot but they aren't spicy enough.

Best of all can eat like 20 of them and wake up the next morning having lost a pound because of keto(assuming all meals in the week up til then are keto).

Fixin' to do a Pandemic Shrimps Bawl y'all,
Like to invite you rascals, one and all (except you, yeah you, still in your jammies, tighten it up sailor, it's game day)
There'll be corn, taters and the little delicacies of the sea
Enough for a party of six but it will be just li'l ole me( but with shrimps, I can count for three)
Starting off this day with Mary's of the Bloody type
Time for the real stuff, I am tired of the bloody hype.
Be plenty of libations and snacking done just right
With one special elixir set aside just for this night.
Yes, it will be me all by my lonesome, the dogs and me
But I will be rooting for a victory for me and thee.

Yeah, I know, shouldn't be all that crap in ()'s in a poem but it's a crappy poem and worth every dime you paid for it.

As far as libations, and what menu is complete without that, I have decided on a new tradition. At least we know we've got this opening weekend and after the damnedest six months I can recall, this calls for something special. After all, I have to be loud for the missing crowd. Got a bottle of Moet & Chandon chilling. No not Dom, I am watching football, not trying to get laid or begging forgiveness, the two were often misinterpreted by both of us.

Enjoy the games today, me buckos, and get primed for the prime event of the day.

I used to bake my wings. Then used the instant pot and broiled for a couple of minutes. Now I will only use the air fryer. They are really crispy on the outside and very tender.

As for sauce, my goto is teriyaki, sriacha, and lime juice. Bomb!

Steam those wings for about 8 minutes, depending on their size, and then hit the air fryer higher than usual and you'll get a crispier wing and less mess to clean up. Don't go straight to the fryer, let them dry out a little.

Heading out to the ALL YOU CAN EAT Mexican buffet.

I'm sure I'll put a little of everything on my plate.
Cheese enchiladas
Sour Cream enchiladas
tacos
Tamales
Chilli Rellenos
beans and rice
Chips and salsa

Finish it off with some fresh hot sopapillas and honey.
do they still have the little flag
on the table that you raise when you want more sopapillas?

Delia's tamales reminds me of my mom's!
Which one do you buys them at. I go into Edinburg when I get a craving.
The opened a new one in San Antonio about a month ago. Initial wait times were over 5 hours. Tried them a few weeks ago to see what the fuss was all about and the definitely lived up to then hype. My favorite is cream cheese and jalapeño. I eat some of those with pork tamales, too.

Get some bean tamales. Cut them into half inch slices, fry them til crispy and mix a couple of eggs in. Great for breakfast!
