Just put the Turkey on. I use the oven bags and they make it amazing and super quick! Turkey is 26 pounder!

All the fixings that go with the glutinous beauty that is this holiday. My favorite meal is not the initial meal, It’s the meal tonight after everyone has left!

Oh, and yes I will be drinking all day today! Cheers!

Just l'il ole me so a turkey is too much so I enlisted it's smaller cousin, the chicken. Injected it with my fried turkey juice yesterday and made some cranberry sauce and doing some mashers and peas and making some Waldorf salad and a fine relish tray of pickles, olives and peppers. Top that off with some brioche rolls and finish it all off with a slice of hot apple pie and egg nog ice cream.

Gonna roast that injected chicken at 325 until it's just right, take it out, remove the skin and return that to a 450 degree over to crisp up that Tony Chachares dusted skin until it's oh so crispy and use that as a topping. All of this is the prelude to the main event when that carcass with serve double duty in making the stock for Cajun Chicken and Andouille gumbo for the weekend.

We shut down our usual big hosted turkey party because of covid. My wife bought a ham but it’s gonna be low key. I thought the traditional food without the traditional guests would be more depressing than joyful. I am looking forward to watching the game though, the one tradition that’s intact.

Cornbread dressing,, so many overlook and disrespect this most delicious dish if done right.
Have to chop the celery and onion ultra fine, and lots of chicken stock... the bomb
