I make a killer green chili hash with chorizo, potatoes, avocado, and roasted green chilis. My favorite is probably crabcake eggs benedict when done right by somebody besides me. For an easy breakfast it's hard to beat bagels and lox.

Sunday mornings are my Bloody Mary day though. I like them super hot, pickley, strong, and loaded with veggies.

Either Huevos Rancheros or Migas.

Fry a couple of corn tortillas until almost crisp, top with cheddar and jack cheese, two fried eggs, salsa and cook in the oven until the cheese melts. Simple and delicious.

Tear up corn tortillas and fry until right at that crispy stage, remove and drain. Fry onion, bell pepper and jalapeno, when almost done add eggs, when eggs are almost done throw in cheese and the tortillas until they begin to soften.

Serve both with Border Browns, parboiled potatoes, onion, green pepper, green onion and jalapenos all crusty and brown in a cast iron skillet cooked in bacon drippings.

Want to top this off just right, tear up flour tortillas and fry them in a mixture of butter, cinnamon, vanilla and sugar until they are crisp and drain them.

I like a plain sesame bagel from the local bagel place and a cup of coffee. Here in NJ, just outside of NYC we get great bagels.

...Weekend or other wise...Oatmeal with cinnamon and honey, and then a boiled egg or two for the protein, and coffee of course! ( P.S....These days "they" are saying that Oatmeal is bad for you. I'm not listening.)

non organic oatmeal that is gmo and was sprayed with glyphosate before it was harvested is bad for you.

Do you soft boil or hard boil your eggs. I have got mine down where you can hold them in your hand like a hard boiled egg, but when you bite into them the yolk is thick and runny. A little salt and pepper

But I must say, sometimes there's nothing that hits the spot like a breakfast taco, pizza or a bacon cheeseburger. And if that dog that bit you last night is still hungry, nothing better than a sack of sliders.
