I wonder if the Cowboys is hoping that Brady Jarrett gets released or traded. There is no guaranteed money left for the Falcons to pay him and the cap hit is 16 mil.
2022 is Jarrert's last season under contract - releasing him is out of the question.
An extension is an option - but given the current state of the team, the DT might want out of Atlanta for greener pastures (contender & \ or lucrative 2nd contract) and just play out the season.

That leaves a trade being the optimum scenario for all parties involved-
1) Falcons get draft capital (2nd ) instead of nothing
2) Jarrett get his payday + better team to play for
3) NFL teams vying for his services can negotiate an extension as part of the deal

Are the Cowboys willing to call the Falcons to obtain a still very good player to upgrade their DLine?

The hit this year is 23. The Falcons save 16 whether it is pre or post June 1st. Releasing him is an option but they would want the trade to get something.

We will see. Falcons may accept a 2nd or a 3rd for him.

Grady Jarrett's base salary is 16.5 million this year. He had 1 sack last year and 4 sacks in 2020. They aren't stupid enough to give them a 2nd or 3rd and take on that salary. Falcons would have to release him and then he could sign a cheap 1 yr deal and try to increase his value back to when he signed his contract under Quinn.
