The video in the OP brings up an interesting point. Goff got his money. Wentz got his money. Is either team particularly happy about that right now? Are they really what people want to use as a baseline?
IMO, the Cowboys can win with Dak as QB. He has been among the least of Dallas' problems this year. The defense sucks. The o-line can pass block but not run block. Zeke is struggling. The coaching has been piss poor. I think if you put a good team around Dak with good coaching, the team could make a serious run.
The issue is that Dak really isn't a game changer. He isn't one of the top 5 QB's. Arguments could be made for top 10. He is down to 11th in rating. He was 14th last year, 18th before that.
The counter point is that you are probably going to struggle to replace him. Being the 11th best human being on the planet at being quarterback isn't exactly easy to replace. If you just dump him, it might be a bit before you find a replacement of his talent level.
Its ironic but the Dak supporters pointing out just how bad everyone else is on the team works against Dak. If Zeke is cooked. If the O-line is done. If the defense is beyond repair . . . . why exactly do you lock yourself into a middle of the pack QB for 5 or more years?
All signs point to the franchise tag. Personally, I would give him the non exclusive. If some team wants to give Dak $35m per year, let them. I'll take the two first rounders and start trying to rebuild the team around a new coach. I tend to agree with the Dak supporters in saying the overall team isn't as good as was purported. Dallas isn't on the cusp of being a dynasty or something.
