Couple of things:

1. The NFL channel will *usually* replay each game. Wait for them and record/Tivo...

2. If you can't do the first, the 'Slingbox' method is pretty easy (even if you don't have a Slingbox branded device. Simply use your TV-tuner card and Windows Media Encoder. You can then use Media Player to connect. It's really easy.

Unfortunately, I don't live in the Cowboys' broadcast area so I won't be able to assist...
