Cowboys had Cliff Harris and Charlie Waters, Brock Marion and Darren Woodson, Darren Woodson and Roy Williams - Roy could play when Woody was there. Woodson could cover the slot man to man.
Carnell Lake and Rod Woodson (although I'm not sure if Woodson was still a CB)
Dennis Smith and Steve Atwater
Other notables: (aside from the Cowboys already mentioned)
Polamalu and Ryan Clark
Merton Hanks and Tim McDonald
Darren Sharper and Leroy Butler

Yeah, Atwater/Smith came to mind quickly, though I am partial to Cliff and Charlie.

Atwater and Smith is a good answer.
Again, I am longing for old times, but in age in which defending the pass is basically impossible, the Seattle duo is pretty special, all things considered. I realize some might use that Charger game to take down Kim Chancellor a couple of pegs, but I am still a huge fan of what they do.
Darren Sharper and Leroy Butler
I don't think you can consider Sharper and Butler -- didn't play together that long. Butler was already at the tail end of his career when Sharper starting emerging.
Combined they had 91 interceptions which would be a strong factor if they had played together longer.
Speaking of Darren Sharper, I suspect he'll never see the NFL HoF despite his 63 interceptions...
Not early in his career.Roy was a liability in coverage. Brock Marion wasn't that great.
