If they get a long term deal they can backload the contract so the cap hit isn't that big during the three year window the team has.
even with a long term deal it would be very hard to do that because of the guaranteed money involed. It's reported to be approx 105m in guarantees, you can't really backload with that type of guarantee, say it's a 6 year deal, well with an average of 35m per season and 100m in guaranteed money, if you try to make the 1st 3 years at even 25m the last 3 have to be 45m. If the Cowboys gave Dak a 100m signing bonus to take care of the guaranteed money and spread it out over 5 season, Dak would still have to play for an average salary of just 5m per season for the 1st 5 years to keep his cap hit at under 13% of the cap . He won't do that and wouldn't blame him. With these very large guarantees now it's not as easy to backload contracts
