Every team (well almost every team) has a qualified pro scouting department whose job it is to review film and try to find anything that tops them off to what an opponent is doing. The better teams have better scouting. They were also able to scout the Rams and find that McVay was coaching up Goff on the field. And defense's waited before they showed their hand on the field. That's why Goff's numbers dropped during and after the Bears game. They were the first to figure that out.

I just hope the Cowboys have identified and eliminated those tells

There were 3 basic issues:
1. Rams knew how the DL would Stunt based on alignment.
2. Rams offense out-scheming the Cowboys defensive scheme.
3. Ram offensive out-scheming the Cowboys individual players (i.e. mislead the players).

Based on study of game footage:
"Tells" from alignment
I think this was primarily an issue early in the game.
The Cowboys made some adjustments, but they were already getting worn down, especially once Woods had and injury issue.

The Cowboys made "some" adjustments to the scheme.

This was the biggest problem.
The players are coached to play based on "rules".
"Rules" are how LBs know which gap is their responsibility.
The Rams schemed against these fundamental "rules".

There was no way for all of the players to "re-learn" the "rules" during the game.
