Tech question regarding WiFi

I had a discussion today with someone from our Jersey office and the subject of WiFi came up. I do some work on my laptop and some of it is on our corporate portal, some of which is is sensitive. The question was this, If I am using Wifi connection either at my hotel or any where for that matter, can anyone around or the establishment itself see what I am on or what I am doing?

I guess what I am trying to find out is if the hotel or whatever can see the website and information I am viewing or typing. I doubt that they would try to hack it.

Not sure if they would but it is possible for them to track which websites and IP addresses a given client is accessing. Technically they could view anything you send over the network to a non secure website, but they wouldnt be able to see what you are viewing without hacking into your system.
