Interesting that you have Gallimore and Gay ahead of Kinlaw and Murray. I see Gay as underrated and potentially a Rd1 sleeper but I don't see it with Gallimore. Especially ahead of Kinlaw in terms of traits.

Kinlaw has bad knees some teams will be scared off from him vs Gallimore ran a freakish 4.8. Gay has blinding speed

We just signed Gerald McCoy & Dontari Poe, it isn't a high need now.
Kinlaw is this years CowboysZone poster child. If hes passed on this board will have a complete meltdown. I still see many poster saying McCoy and Poe are just a band aid to the problem which is kinda true. Doubt we have Poe for more than a year and McCoy probably gone after year 2.

personally myself i would either go Kinlaw or CeeDee Lamb. I know we need defensive help but having another high power offensive weapon to keep the offense charging down field can be just as effective as a good defensive player.

Overview
Ascending 4-3 defensive end who should go from good size to imposing frame as he fills out his power-forward body type. He isn't overly twitchy but impressive length, fluidity and short-area athleticism allow him consistent work-arounds against opposing blockers. He's average at the point of attack by NFL standards, but that should change with additional strength work and more efficient hand usage. The rush toolbox is only halfway full, but it's just a matter of time before his spin move and a speed-to-power charge become part of a diversified attack. Gross-Matos should be an early starter, but when the power and skill catch up with the athleticism, look for him to become one of the more productive defenders in the league.

Both guys are likely one year options, maybe two, at best.

Passing on Kinlaw for Gross Matos would be a Taco Charlton let's pass on Watt mistake.

Wait........... Lamb fell to 30? There is ZERO CHANCE Lamb gets past Philly. Philly has never put much value in LBs so they aren't going to take one in the first round, especially when they need WRs in the worst way. They'll phone that pick in within 30 seconds if Lamb is sitting there.

And we've done nothing to replace void left by Quinn which Gros-Matos would do.

He likely would not.

Expecting a rookie to come in and provide the kind of QB pressure Quinn provided would be fairly unrealistic.

I agree at the beginning of the season, rookie edge rushers not named Bosa have a learning curve, but if we do sniff the playoffs I would hope by the end of the year he would have acclimated somewhat to the NFL. With some good coaching he could be getting some pressures and maybe some sacks. A lot of rookie edge rushers have done that. At the end of each season Jimmy used to like to say there are no rookies. Even if it takes a little longer we would have addressed a position that is expensive to fill in free agency with a talented young player on a rookie contract.
