If you see someone about to run into you, the natural reaction is to dip your shoulder to protect yourself.

If Lamb had posted up or turned inward, then it would have been an offensive penalty, but running your route and a defender hitting you from the side is not an offensive penalty, but defensive penalty if it is far enough away from the line of scrimmage
