The same reason other sports do it because it gives them more items to sell in their shops.

Eventually every game will be a different uniform and you will have to read a pre-game set of instructions just to know which team is yours.

It’s more about it being a rush of one color. These color rush jerseys are mostly just taking one of the teams colors and making it the whole jersey. You’ll likely see an all blue one for Tennessee.
