Traditional Borracho Ranch Style Beans:
Pinto Beans (Small bag)
1 Onion (finely chopped down with a food processor to liquid or very close)
2-3 Cloves of garlic (chopped down with the onion)
1 Small Green Bell Pepper (chopped down with the onion) **Optional**
1-5 Serrano Peppers (Or jalapeno) whole or sliced, depending on how spicy you like it
2-3 Large tomatoes cut in 4 sections
1 LB of pork salt cut in cubes (There is no real substitute)
1 Small can of tomato sauce
2-3 Tbl spoons of Chicken Knorr & Tomato Knorr (Has plenty of salt)
1-2 Tbl spoons of ground comino (Cumin)
1 Beer (Added 3/4 thru cooking time)
1-2 Fist fulls of Cilantro (Added at the final hour)
Line bottom of pot with olive or corn oil, not to much though.
Keep water level above the beans, check it every 1-2 hours.
At the beginning bring to a boil then reduce to simmer (Very Low) usually takes 4-6 hours to cook. You can soak the beans for a few hours prior but not always necessary.
This recipe should only be used if you like real traditional stuff, if you eat at Taco Bell then don't bother, you ain't worthy....
