Beef Jerky Recipes

Been making a lot of beef jerky lately. Trader Joe’s sells this shaved sirloin which has the perfect thickness for beef jerky.

I don’t measure out my ingredients but here’s what I use:

- Low sodium soy sauce (filtered water to dilute it)
- Hickory liquid smoke
- Smoked paprika
- Onion Powder
- Garlic powder
- Cayenne pepper
- Chili flakes

Marinate for 12-14 hours/dehydrate for 7-8 hours

Anyone else have a good recipe?

I've always wanted to try this. I got no suggestions but what you're making sounds awesome!

I use flank steak and marinate it in the following for 12 hours and then use an American Harvest dehydrator. Measurements are approximate as I eyeball it.

Soy Sauce 8 ozs
Lee & Perrin Worcestershire 3 ozs
Crystal Hot Sauce 1.5 oz
Mike's Hot Honey 1,5 oz
Crushed Red Pepper 1 tsp
Freshly Cracked Black Pepper 1 tbl

BTW, the best I've ever found in a grocery store is "old trapper" peppered beef jerky. the other brands are rubbish

Rabke's near Willow City TX is the best farm produced. Way out in the wop wops but well worth the scenic drive!!!!!!!!!!!!!!!!!!! All sorts of jerky from all sorts of animals and family run!!

Yeah, not a fan of too many store brand jerky. Haven’t had Old Trapper but I’ve seen it at Safeway. I do like Saint Archer’s jerky. Oberrto’s is rubbish.

Deer jerky at Deer World in Eden, Tx. is the truth. Farm raised imported deer, not white tail.
I get around.

I get rave reviews from jerky people and a nice sprinkling of Maldon Sea Salt Flakes sets it off just right.

When I first went to OK, I didn't realize that my Office Manager was the daughter of the owner of Hard Times Beef Jerky and he actually started that company with her recipe and she was a jerky fanatic. I brought some of mine in to share for a holiday party and the staff just looked at me and then I was told the story. They got a good laugh out of it and then began to eat the jerky and I could see the look on her face. She asked me for the recipe and started using that as her go to. I didn't have Mike's Hot Honey at the time so I used homemade jalapeno infused honey but that Mike's Hot Honey is the stuff legends are made of and I use it on a lot of foods and in all my marinades.

You get the salty, the sweet and the heat and with an ice cold lager, damned near perfection. Then you get to spend 30 minutes getting to know your dental floss really well. Hard Times includes a pick in the bag with theirs, great idea.

That jerky marinade makes a great marinade for pork tenderloins or porterhouse chops as well but it's a little strong for chicken. Great with garlic and ginger added too.

Sounds funny but the best store bought jerky I’ve ever had is from the gift shop at Yosemite Valley Lodge at Yosemite. We make it a pony to buy at least 2-3 bags every time we go. I cannot find it anywhere else. It’s made by SunValley Farms (or something like that) but there’s no website info or anything on the packaging I can use to track it down.
