I mean, it really won't matter that much. McC will have the OC responsibilities, and the guy who gets the title will be, effectively, his assistant.
More interesting question is who will be Dak's new QB-whisperer, and who's taking Philbin's spot.
If one subscribes to the theory that McC is going to hire people he already has learned to trust, Tom Clements or Ben McAdoo are available for QB coach. Clements might consider himself retired at this point, though.
The new OL coach is probably the guy who probably just lost his job in Carolina... longtime GB OL coach James Campen.
Then again... if McC goes counterintutitive for those or other positions, I for one would limit the field of likely candidates to those who can claim African American heritage. Byron Leftwich, for one, is bound to be a popular candidate for open QB coach positions if he doesn't get an OC job.
