right every couple of months some sort of recipe thread pops up on here. thought rather than go for another chili one i'd start a local one, ie post up a recipe traditional to your area. theres members from all over the planet on this site so potentially this thread could be a good resource if anyone fancies cooking something a bit different and impressing folk with their wordly nous or getting n the good books with her indoors ;)

i'll go first with some simple scottish fair that i ate a lot growing up and recently made for the first time in years.

mince 'n tatties

1lb ground beef - if using hamburger meat you'll need to strain off some of the fat.
2 onions
2 sliced carrots
handfull of toasted porridge oats
couple of beef stock cubes
bisto gravy powder (not sure if you get that over there, its a beef gravy. if not then you can just mix cornflour and water to use as a thickening agent.)

firstly saute the onion in a pan to soften then add the beef and brown it. add the carrot and oatmeal then add just enough water to cover everything and crumble in the stock cubes (could just add in beef stock rather than water and cubes if thats what you have handy)
cover the pan and simmer for 20 mins or so till the beef is cooked then add your thickening agent (bisto works best if you can get it due to its beef flavouring)
serve with boiled potatoes and if you want more veg then some peas.
cheap, tasty and bloody comforting on a cold night.
oh aye and you'll want some bread and butter to mop up all the gravy left on your plate.
 
Mine's simple:

Boiled Crawdads

Boil water, add some crab boil, dump in crawfish, potatoes, and corn!
 
Very simple, but really good Spaghetti bolognese.

Ground 1lb beef cooked and completely strained of all fat.

Get smoked sausage. Eckrich, Hillshire Farm, which ever brand you prefer. You can use the all beef sausage or the other, it doesn't matter all that much.

After you've strained all the fat from the ground beef, slice up the one of the two links of smoked sausage that come in a package pretty thin. Turn the heat down to low and throw the sausage in on top of the ground beef. Let the low heat sweet out the sausage (release the sausage fat) Then poor in your spaghetti sause (however you make/buy it) and kick the heat up just a bit and let cook for about 10 minutes until it's pipping hot.

Serve over spaghetti. The smoke sausage gives the spaghetti sauce a great flavor. It's easily one of my favorite spaghetti sauces. While my wife loves the taste, she doesn't let me make it all that often. She hates sausage unless it's turkey sausage. (the whole excessive fat deal)
 
I don't have a recipe for this but a local place down here serves the most delicious shrimp and grits. This is the description from their menu -

"Fresh shrimp sautéed with smoked bacon, bruschetta tomatoes & a sherry cream sauce. Served over our cheese grits with garlic bread."

And it is so good! It can't be that difficult to make as long as you got the cream sauce right.
 
Smoked Brisket. I don't have a recipe but I bought a brisket at Costco today and I'm going to give it a whirl. Any hints would be appreciated.
