Can anyone tell me why vids from nfl.com are always choppy and generally crappy as compared to ESPN or even DC.com? Thanks!

Choppy usually is higher bitrate and different compression codec. Your comp may be struggling to play it at full frame rate.

NFL.com lowered their quality unless you install Akamai NetSession. *cough*loadofcrap*cough*
