To do a 16 man PS is about impossible because almost half of them will be picked up after cuts. But a few I think they try to keep:

CowboysZone ULTIMATE Fan
Prescott, Rush
Elliott. Pollard, Dowdle
Lamb, Tolbert, Fehoko, Brown, Gallup, Turpin, Washington (then moved to IR), bring back B. Smith
Schultz, Ferguson, Hendershot
Martin, Steele, Smith, Biadasz, McGovern, Ball, Waletzko, Farniok, Collins (unless they go 3 QB's)

Dlaw, Armstrong, Fowler, Williams, Golston, Odighizuwa, Gallimore, Hill, Bohanna, Watkins, Bashem (unless they go 9 OL & 3 QB's, then 1 of the last 2 go)
Parsons, Barr, LVE, Cox, Harper
Diggs, Brown, Lewis, Bland, Joseph, Kearse, Hooker, Wilson, Mukuamu, Bell

Maher, Anger, McQuaide

Grier, Davis, Houston, McKeon, Gifford, Wright. Goodwin (until some roster spots get sorted out), Jefferson
Jones, Lindstrom, Ridegeway, Tafua, Bryant, Coyle, Thomas, K. Brown (though released last week, waived injured)
Alarcon as the 17th for international player.

Clark stays on NFI

There may be a few vet players initially released and brought back for some roster churning as players moved to short term IR.
I want to add Shamplkin to the PS also. Trying to decide which player to swap out, probably Brown, but for now felt I needed a CB in there.
I also wanted to keep 6 LB's, add Jefferson or Gifford.

11 on the DL is a lot, but there is a lot of depth also. I hope they don't keep Wright just because of his draft status. Maybe a trade happens, but doubt it, it never does.
And, no, I do not fear any of the PS players getting poached. Not even Houston. You need to keep in mind most teams really do "like their own guys" and will go with who were in TC with them 95% of the time. (just made that 95% up. LOL) But it is a good guess.
It is the poor teams that picked in the top 5 to 10 that may come looking, but probably not right away.

QB (2): Prescott and Rush (or Grier, does it matter? ).
RB (3): Elliott, Pollard, and Dowdle. I would keep Davis but think they go Dowdle.
WR (9): Lamb, Brown, Turpin, Gallup, Fehoko, Tolbert, Smith, Houston, Washington. This is A LOT but gives flex later on.
TE (4): Schultz, Ferguson, Hendershot, and McKeon. I don't know the injury status of McKeon so maybe he just goes to IR for the season.
OT (4): Steele, Tyron Smith, Ball, and Waletzko
OG (4): Tyler Smith, Martin, Farniok, McGovern
C (1) : Biadasz

Offense: 27

Obviously, this adds up to 56, not 53. My guess is that, initially, Jake McQuaide, CJ Goodwin and Dante Fowler are all released. Then, on Wednesday, the team will move James Washington, Tyron Smith and Sean McKeon to IR to make room to re-sign those 3. Contractually speaking, those 3 players are my best guesses to be the "dummy" cuts, based on being free agents next offseason and having low dead money figures (Cooper Rush and Noah Brown are two other possibilities, again, just from a contractual standpoint).

Practice Squad

Ben DiNucci
Will Grier
Malik Davis
Dennis Houston
Brandon Smith
Dontario Drummond
TJ Vasher
Isaac Alarcón
Alec Lindstrom
James Empey
Braylon Jones
Mika Tafua
John Ridgeway

Juanyeh Thomas
Tyler Coyle
Isaac Taylor-Stuart

Notes

Tyler Coyle was my hardest cut, but we just have too much safety depth. I think a Donovan Wilson trade is something that could sort of make sense, since 1.) he's a free agent after this year 2.) Kearse and Hooker are both under contract next year and 3.) we have three young, good looking players in Mukuamu, Bell and Coyle (Juanyeh Thomas hasn't looked terrible either).

Dennis Houston was my next hardest cut. I was surprised to see them indicate they'd be keeping Gallup on the active roster, seems like it'd be better to take the roster spot and give him the full 4 weeks on IR. I'm guessing it'd only be 1, maybe 2, games difference. If they change their mind on Gallup, then I can see Houston making it. Otherwise, 8 receivers is just too much. They may also consider just cutting James Washington outright at this point, but since he's going to IR that technically doesn't help with a roster spot anyway, maybe just makes some of the maneuvering easier.

This looks a little different than my previous roster, mostly because I went ahead and carried 5 safeties, because DQ likes safeties at LB. And so do I. So Wilson is back on my final gameday roster.

I realize today's roster will look a bit different, because players will get cut so others can make IR and come back.

Quarterbacks (2)

Prescott
Grier (I still say Grier, but DiNucci turned it on tonight a little bit. I would poach Strong from the Eagles if I could. In all honesty, I'd drop all 3 of our guys and go poach Carson Strong from the Iggles.)

Running Backs (3)

Zeke
Pollard
Davis (Even though Shampklin may have outplayed him by a tad, I place him on IR and see how Davis does. If Shampklin was healthy, he'd be my personal favorite for the 3rd spot. Many don't know that Shampklin is also good in pass protection, and can catch well. He also returns kicks.)

Receivers (7)

Lamb
Gallup
Fehoko
Tolbert
Brown
Turpin (James Houston sounds nice, but there's not enough space for him behind Fehoko, Tolbert, Brown. What would he do when Gallup returns? In any case, you really don't need 7 receivers and you can get by with 6.
B. Smith

Tight Ends (3)

Schultz
Ferguson
Hendershot (More upside than McKeon, overall. Hendershot has an 8.4 RAS, so he's got more athleticism, even though he's a tad smaller. If Ferguson or Schultz get hurt, you still need a well-rounded TE and I think Hendershot is a more complete player, and likely a better STer, too. Place McKeon on the PS, as a veteran.)

Offensive Line (8)

Ball/Veteran Free Agent
T. Biadasz
T. Smith
Terence Steele
Zack

McGovern
Farniok

One of these two scenarios.

Empey (I was thinking the Cowboys could go with 2 back up centers, given the headache the middle of the OL was last year. And I thought Empey played well. Plus, Farniok can play guard as well. You can also release one when Gallup/Washington returns. If Farniok plays guard, Empey could back up at C. In any event, I think Empey comes back to PS.)

*TBD/Waletzko
(swing tackle if healthy. If not, we'll have to find a vet and put Well let's go on PUP).

Cornerbacks (6)

Diggs
Bland
Brown
Lewis
Joseph (Not sure if he gets IR'd or what. People saying Joseph didn't play well, are talking about how they perceive the person, not the player, and really don't have a clue anyway.)
Wright (Those who are ready to quit on Wright don't really know what they're looking at either. I keep him over CJ Goodwin. At least he's able to fill in somewhere. CJ Goodwin is ST only. I think Wright can be CJ Goodwin on ST. Then again, we only suit 45 on gameday, so maybe they do go with Goodwin, which would be a shame.)

Safeties (5)

Kearse
Hooker
Bell
Mukuamu
Wilson

Defensive Ends (5)

D-law
Dorance
Fowler
Williams
Basham

Defensive Tackles (5)

Gallimore
Bohanna
Oddigy
Hill
Golston (It's either Golston or Ridgeway. I'll take Golston and Ridgeway. Ridgeway isn't going to help our team, likely ever. I just don't see him as an NFL level player, and I'd be more inclined to keep Watkins anyway. Get a new UDFA or late round pick next year. I hope another team picks him up and we get to play against him so all of his fanboys could see his actual talent level. Cowboy fans would root for any DT, simply because the Cowboys finally addressed the position. Lastly, I wouldn't be upset to see Watkins get on over Gholston. If the Cowboys put their egos aside, that's what they'd do anyway, because he's likely better than Ridgeway and Golston, who disappears at times.

Linebackers (6)

Parsons
Barr
LVE
Cox (I could go Cox or Gifford here. Neither are very good at this point)
Harper
Jefferson (Could be Jackson, Cowboys likely go Gifford. I personally would go with a new player here, either Jefferson or Jackson.)

Special Teams (3)

Anger
Kicker (hopefully not Maher, although it's him right now.)
McQuade (McQuade probably won't make the initial 53 to make room for Washington, then comes back after Washington is IR'd.)

PS

I'm sure the Cowboys will handle it. I'm not sure how the numbers work out. But I would like to keep a few players like Juanyeh Thomas, Quadre Mosley, James Houston, Empey, Tafua, and even Ridgeway and McKeon handy, just in case we get hit with injuries. There's also Drummond, Fryfogle, Jackson, Taylor-Stuard, Jefferson, Dowdle, Shampklin, etc. I'm not concerned too much here about the practice squad. While Jones Dee and Jones Dum aren't the best team managers, I trust the Cowboys to let McCarthy, Moore, Quinn, Fassel, get their practice squad right. It's not rocket science. I like that we have several players who are good enough to make the roster but won't quite make it. That's a good problem to have. It's just too bad we can't throw some of that talent at the offensive line.
