The claw isn't actually a claw. It's actually a long distance "high five". Since they aren't in the dougout, they high five from a distance.

The antlers sign is given anytime someone puts on a display of speed in making a good play. Running down a ball, stealing a base, scoring from first, stretching a double into a triple, etc.

They are just celebrations.
 
The antlers came from Hambone getting his first deer and he hung the antlers above his locker. But NYC is right thats what it means. When they give a high five they claw it down interlocked fingers. I love it,its like unity. this team is very team oriented and confident unlike the football team across the street.
