Getting together with the family to watch the game, making my famous meatballs, made a Golden Oreo cheesecake (dedicated to my aunt), and a blueberry cheesecake, we'll be having some other things, wine coolers (coog doesn't drink beer/hard alcohol), see what everyone else is bringing!!

Morning Coog! So not my first choice but chili is on the menu with the basic ingredients and nothing fancy. Corn bread muffins along with some adult beverages. (haven't decided yet). Apps include my fave...bacon wrapped scallops. Looking forward to a good game. What else is there to watch?

Refrigerator is packed with stuff for later. Looks like a high calorie intake day for The Big Dog.
 
Going away from the usual SW Florida menu to celebrate (ugh) both teams in the Super Bowl. There is a couple that moved from Philly that opened the best cheesesteak place I've tasted away from the Delaware Valley region. They have shipped from Philly real Liscio's rolls! Shaved rib-eye, Cooper Sharp, and real rolls. There is also a BBQ place opened by three brothers from Kansas City that does authentic KC BBQ. So, today, the menu is cheesesteaks and BBQ! The cheesesteak place is so popular that they only took pre-Super Bowl orders for today. The owner took over 700 orders, all the rolls he could get. KC ribs and brisket will be on tap too. I heard someone is bringing a salad. 17 people today, representing Dallas, Philly, NYG, NYJ, Cincy, Washington, and the Bucs. Temps will hit 83-84 today in Naples, so we have the big screen out by the dock! I did my morning exercise walk on the beach so I can stuff myself later. It was only 72 and sunny this morning at 8am though.

Coog could you share your famous meatball recipe with others? Or is it a secret like KFC and Coke recipes but locked away deep into the chambers of your brain vault never to be disclosed?

Cold cuts. 8)
 
In case anyone is interested
2# Gr beef
2# cubed beef
2 C chopped onions (2 med wht)
3 T minced garlic
1 4oz can green chilies
1 small can tomato paste
1 large can chopped tomatoes
5 T Chili powder (may have it up depending on your chili powder)
1 T Cumin
1 t Cocoa powder
1 t Oregano
1 t sugar
1 T ketchup
1 t Worcestershire
1 Chipotle in Adobo chopped
1 large can kidney beans drained
1 16 oz can black beans drained
1 beer
4 C Beef stock
1 bay leaf
salt to taste
Optional I use these but not required
1/2 t Adobo or so, ilo salt
1/2 t Montreal Chicken Seasoning
1 T veg oil

In a heavy duty pot or Dutch oven w/ oil
sear cubed steak in batches set aside
brown ground beef in batches
reduce heat
sauté opinions and garlic 5 min or so
add can chilis, chopped chili in adobo, can tomato paste, all spices.
Cook 3-4 minutes stirring
Add meat back in w/ juices
add beer to deglaze
add can diced tomato and beef stock, bay leaf
simmer 2-3 hours until cubed beef is fork tender stirring often.
i cook with the lid off so it thickens
Adjust seasoning to taste. I put some cayenne in to make it spicer
 
Back in Houston for awhile, so I drove to Lake Charles yesterday to buy the best roux I ever had. I know, long trip for a pre-made roux but the time to make my own is about the same :laugh:

The crawfish aren’t quite ready, so I got some lump blue crab, gulf shrimp, tasso ham and andouille sausage for the gumbo. Will have plenty of Yuengling beer to wash it down :flagwave:
