For teams, I believe the main value in doing mock drafts is to find clusters of talent on a round by round basis. For example, suppose running 100 mock drafts reveals that there will likely be a cluster of good tight ends available in the 4th round. If that is true, do you spend a higher pick on a tight end? What is the value difference? Also, you can determine when the pool of good talent for a specific position runs dry. This information allows a team to strategize when to pick players at key positions during the course of the draft.
For fans and media, mock drafts are entertaining and mildly informative. But doing a whole bunch of mock drafts has a completely different value for teams that are preparing for the draft. You need to not only scout the players, but also the other teams, their tendencies, and their needs. This helps not only with slotting players, but figuring out potential trade partners during the draft.
