What do defenses do when they see personnel in a game they have never practiced for?

Let me better explain the question with a ridiculous scenario.

Let's say it's the middle of the second quarter in a reasonably close game. 3rd and 9.

And something totally unexpected happens. Not like your RB splitting out wide. I mean really unexpected. Say someone like Parsons lines up out wide. Some crazy alignment.

What is the process for figuring out how to play defense in a situation that hasn't been practiced for?

Call a time out or audible to base defense most of the time.

any decent coaching staff will notice a new player in the offensive huddle so that shouldn’t be a huge issue. Crazy formations still have to play by the same rules as more standard ones. Can only have so many players on/off the LOS, only so many eligible receivers, and only so many players can be on one side of the formation. For the most part this isn’t a big deal. Some exceptions….look at Cleveland in 2016, but that got figured out real quick.

If it's Bellicek he laughs his *** off. If it's Nolan or Marinara they panic and do something stupid.

Defenses have a kill play they go to just like offenses do.
When you see defenders making the missed field goal gesture before the ball is snapped... that's what is means.
If could mean man across, three deep, underneath, or tampa. But yes, defenses have kill plays they can go to. So if an offense shows them something they've never seen before, they'll just play a basic defense against it.

Why would Parsons be on offense? Is this a question to set up a joke?

No, I pulled him at random. Insert anyone that would be completely unexpected. The question was asking what processes a defense has in place when they see something they haven't practiced for.
