Yeah, the NFL (or whoever orchestrated the concept) really dropped the ball on that one.

Isn't the game at 1 pm on Sunday? Why would they be wearing color rush? I thought that was only a Thursday thing?

The Giants only Thursday appearance was Thanksgiving against the Deadskins, the Deadskins decided not to participate in color rush, so the Giants decided to wear their color rush during a game they felt the fans/team would be "amped" up for - the Cowboys home game (I saw this on a Giants site/social media). Mind you, this decision was made prior to the season start, not sure how "amped" up the Giants are at 2-10. Although, Dallas is always a big game for anyone, even a mediocre Cowboys team.

I think they put a lot of thought into the game plan. It may not seem like it to us but I think the coaches spend plenty of time on it.

I don't. I can call the play based on the formation about 85% of the time.
