Just running through scenarios in my head and was wondering how the following would work out.

Let's say the following is true:

Dallas 10-6
Eagles 10-6
Giants 10-6

Cowboys sweep Eagles
Eagles sweep Giants
Giants sweep Cowboys

what determines who wins the division?

TO BREAK A TIE WITHIN A DIVISION

If, at the end of the regular season, two or more clubs in the same division finish with identical won-lost-tied percentages, the following steps will be taken until a champion is determined.

Two Clubs

Head-to-head (best won-lost-tied percentage in games between the clubs).
Best won-lost-tied percentage in games played within the division.
Best won-lost-tied percentage in common games.
Best won-lost-tied percentage in games played within the conference.
Strength of victory.
Strength of schedule.
Best combined ranking among conference teams in points scored and points allowed.
Best combined ranking among all teams in points scored and points allowed.
Best net points in common games.
Best net points in all games.
Best net touchdowns in all games.
Coin toss

Three or More Clubs

(Note: If two clubs remain tied after third or other clubs are eliminated during any step, tie breaker reverts to step 1 of the two-club format).

Head-to-head (best won-lost-tied percentage in games among the clubs).
Coin toss

Well as long as no one loses to the skins, then we'd all have the same division record. I think the next tiebreaker is conference record.

I thought we would have the best W/L record vs common opponents but after I punched it into the simulator it has the Giants winning the division...

you are right. In common games (outside of division), it's 5-3 for both the Giants and Dallas (4-4 Eagles). Since they hold the tie-breaker over us, they'll win the division.

10-6 where we each sweep one another and WAS assumes:
Dallas loses to SD and NO, wins Philly and WAS
Philly loses to DEN and DAL, wins NYG and SF
Giants loses to PHI, wins WAS, CAR, and MIN

Philly has yet to play one non-common oppenent, so you can't determine the outcome of that scenario yet.
If it gets to 10-6 with the Eagles beating the Giants, we need the Eagles to lose to the Broncos. If they win against the Broncos and lose to the 49ers to get to 10-6, we're doomed.

I wouldn't be surprised if one or both of the Giants and Eagles go 9-7. I certainly don't expect the Giants to go 10-6, especially after losing to Philly. Why would anyone think they'd lose 6 of 8 and then go win the next 3?

Evidently, you haven't heard that being desperate has transformed the NYG into an unbeatable, super team. We couldn't have possibly expected the Cowboys to have won that game.

Giants win division we get wc if we have tied div record ( common games eliminate phi if they beat SF)

if sf beats phi and phi beats giants while losing to us and broncos, we're eliminated Eagles win division.
