Dexter is one of the shows I find myself watching with each episode. And the most recent one would have to be

It's such an amazing opening. Showing most of the important geography and it changes little by little every few episodes, as new places are explored in the show. It also fits brilliantly with the whole "game of thrones" theme, being somewhat board game like in design.
The fact that it's not the same every episode really adds extra emphasis on watching each one to see what new things you can catch.
The scroll work on the rings also tells some story, showing the Wolf/Lion/Stag/Dragon. The main houses of the show.
