Cabrito ala Griega is a great meal for Dia de los Muertos. Might be a bit much, tho....you can use the leftover bones for decorations. LolChorizo and eggs for breakfast. Headed over to My adoptive family to help prep for the Day of the Dead...not sure about the mid-day meal.
