Sad news for me personally. He was 1 of the Associate Chef Instructors at The Culinary Arts School of Louisiana (CAILA) in Baton Rouge, I attended in the early 90's. Such a nice man and great teacher.

K-Paul's on Chartres in the French Quarter, was the birthplace of Blackened Redfish and had 1-2 hour waits just to get in the front door regularly.

I've got 2 or 3 Toque Blanche, the tall, white, pleated hats considered part of the "dress blues" of a professional chef's uniform, with his ""Good cooking, good eating and good loving" catch-phrase autograph on them. I had a couple of pics with he and I at a charity event, but sadly those have disappeared.

Thanks to him, I have been blackening fish for a long time! Heck, I will blacken anything :)
 
That is sad, blackened redfish is great, once the smoke clears. He looked like he had lost a ton of weight in his later years.
 
Used to travel to NO quite frequently in the late 80's early 90's...

Was always elated when I could get in to K-Pauls. GREAT restaurant...

Used to watch his cooking show quite frequently as well... RIP, Chef...
 
K-Pauls is great. Love their duck and fried rabbit tenderloin. I was there in March.

Cool story.

I lived in the Garden District in the 80s.
Used to frequent Commander's Palace. (Chef Paul was big there too)

K-Paul's was lots of fun.

Definitely miss the food from that city!
