Why has our offense looked so bad the last two weeks

They are poorly coached.

I'm convinced the reason we have these slow starts every week is Schotty is terrible at gameplanning.

When you have Dak and CD and GP, your #1 priority as a playcaller is to get the ball in their hands. He just doesn't know how to do it, until we start losing and it's panic mode
