Case-in-point. When I was in culinary school in Baton Rouge, we set-up a taste test at our food booth along the downtown Mardi Gras parade route.

We had ppl taste two slices of skinless breast meat. A: Fried, B: Roasted.

It was nearly 50/50 who thought which was more flavorful. And of those who were then asked which was which, almost 3/4's misidentified the roasted as the fried and vice versa.

Another point to consider. A tasty roasted turkey can be accomplished with little more than salt, pepper and a butter/stock or broth mixture for basting.

Fried turkey is dry as Adam's personality if you don't inject it like a skid-row junkie, with some tricked-up spiced butter concoction before frying.
I have been eating Deep fried turkeys now for the last 5 years now and it is without a doubt not overatted. The meat is soooo moist. If yoiur tasting a dry Deep fried turkey whoever is cooking it isn't doing it right.

You know how you cook a turkey and you will have seconds the next day. Well everytime I cook a deep fried turkey it is gone that same day.

I love me some fried turkey. We go to the parent's in law every year for turkey day, and they will alternate frying and roasting. I love turkey either way, but must admit I enjoy fried more.

One question for you turkey frying peeps. What do you do with the oil? Can you save it, or is it a one time use? My father in law would do it every year I think, except he doesn't like having to buy all that oil and then find some way to dispose of it. He only uses it once, and doesn't like all the waste.

You can technically, especially if it's peanut oil as it has a higher smoke point therefore breaks down less quickly.

But I wouldn't personally because after 45 mins of 375 degree temp, everything you'd fry in it there on out, is gonna taste like poultry to some extent.

But apparently, what do I know? I'm only a CEC, CCE, ACF.
