He admitted he was out of shape. That doesn't necessarily mean he is too fat. It could be a reference to his stamina and conditioning.

To say nothing of the different schemes and requirements between Denver's offensive line and that of the Cowboys.

One places a premium on lighter, more mobile linemen, while the other wants roadgraders with a premium on size and strength.

I think Holland is simply a better fit in Dallas than he was in Denver.
 
The Broncos liked Holland enough that they tacked on two years to his contract last year and gave him a $1 million roster bonus on the first day of the NFL calendar year in March.
This was my favorite part of the article.

Shows that they did like him, he can play, so he was traded simply for getting into Shanahan's doghouse for entering camp overweight.

Now he's getting a 2nd chance as a Cowboy with a clean slate (I sound like a broken record, huh?), and it might just pan out the way it has for our other "2nd chancers".

And if he really can play well at the LG spot, who knows... maybe Kosier never gets his job back.
