Thought it'd be an interesting idea for a topic, my favorite non american actor is Demián Bichir, i've seen too things he was in (Che & Weeds season 4, 5 and 6) and his acting absolutely stood out as outstanding.

That is a good list. I'll add Cate Blanchett, Gael Garcia Bernal and Liam Neeson.

Daniel Day-Lewis

I've only seen him in Gangs of New York and There Will Be Blood so far, but love him in both of them. I plan on watching more of his flix. Any suggestions?

Interesting tidbit on DDL-
Day-Lewis put his personal version of "method acting" into full use in 1989 with his performance as Christy Brown in Jim Sheridan's My Left Foot which won him numerous awards, including the Academy Award for Best Actor. During filming, his eccentricities came to the fore, due to his refusal to break character.[10] Playing a severely paralyzed character on screen, off screen Day-Lewis had to be moved around the set in his wheelchair, and crew members would curse at having to lift him over camera and lighting wires, all so that he might gain insight into all aspects of Brown's life, including the embarrassments.[9] He broke two ribs during filming from assuming a hunched-over position in his wheelchair for so many weeks.[14]

Agree with Hugh Laurie. After watching him do House for so long, its funny to go back and watch him in some of those British comedies he did awhile back. I watch Black Adder on Netflix a lot, and he cracks me up every time.

I still say he'd be the perfect Roland in a Gunslinger movie.

There are already some good names mentioned. I'll add Thandie Newton and Djimon Hounsou to the mix.

Even Hugh Laurie's voicework is great. He made Dr. Cockroach just as memorable and enjoyable as all the other main characters in Monsters Vs Aliens.

Rutger Hauer
Hauer once played in a little movie called Blind Fury (I think in the late '80s or early '90s). He portrayed a Vietnam vet, who was blinded in the war and was trained in the art of sword fighting. It doesn't have a lot of great acting in it, but it's a very good heartwarming film with some GOOD action. I would highly recommended if you've never seen it. :)
