They have the Miller Lite plaza which will be open several hours before the game. Lots of activity there. Some games, a big turf field they can run around on. Some of the pre-game shows are live there. There will be music, the cheerleaders make an appearance. You can also watch the early game on big screens. And I think they have $5 Miller Lites in the plaza which is an absolute steal for in-stadium prices, and there are food trucks. Keep in mind that the Miller Lite Plaza is AFTER the stadium security. So once you're in there you're inside the stadium for the rest of the game time. There's no going into the plaza and then back out to the tailgating area.

You could also walk around and catch some of the tailgating around the stadium. There's always some fun groups out there.
Lastly you could go to TexasLive! but that's getting to be more and more of a rip-off. They now charge a $20 per person cover charge and the inside prices are about as expensive as inside the stadium.
