Never heard of doing a standing rib roast that way (Northeasterner) - how long does that take and what variety of doneness do you get throughout the roast?

I'm making little sourdough bread pizzas using meatballs (cut in half), onions, and peppers with sharp cheddar and parmesan cheeses topped with red pepper flakes. I like my sauce a little on the sweeter side so I'm using Ragu Super Chunky Mushroom.

Had zero idea about this place but will try it now. My favorite and I have not found a better bagel anywhere else is plaza bagels (aka punk rock bagels) in Clifton NJ. Where I live now the bagels are just ok but Sonnys is only 15 min from me so I will try them soon.
