The Cowboys are not the only team meeting with those players, especially the top 100 guys. If anything look at the guys projected to be 5th rounders to UDFA.

People also pitched hissy fits about us broadcasting our interesting in Tony Gonzalez, telegraphing our interest in him and guaranteeing he'd never fall to within our range (or guaranteeing we'd have no leverage and would get raped in any attempt to trade up for him).

Jourdan Lewis wasn't a visit last year and he was a steal in the 3rd round. Dallas knew him well enough from coaching circles they were comfortable taking him. I'm sure there are a bunch of others if you look for the information.
