The turkey's in the oven, the Macy's parade is on the television, the family is coming to my house.....I have so much to be thankful for, I couldn't begin to describe it all. God Bless America and Happy Thanksgiving to all!

T is for turkey on Thanksgiving Day,
H is for "Hurry, I'm hungry!" we say.
A is for Auntie, she works and she mends,
N is for Native American friends.
K is for kitchen, the oven's on low,
S is for silverware, set in a row.
G is for Grandma, the one we love most,
I is for inside, where we're warm as toast.
V is for vegetables, eat them we try,
I is for icecream on top of the pie.
N is for never do we have enough dressing,
G is for Grandpa, who gives thanks for our blessings.

I use a recipe from a friend of mine that's a genuine Coon A**.
You'll need a deep frier kit like this one:

When you buy the turkey, fill your pot wih water and place the trukey in it to gauge how much cooking oil you'll need. You don't want to over fill the pot because it will boil over and start a fire. NEVER fry the turkey indoors and definately do NOT do this on a stove in your kitchen!!! Once you know how much to fill the pot with oil, then follow the recipe.

1/3 cup Red Wine Vinegar
1/3 cup Olive Oil (no Popeye)
1/3 cup Dry Sherry
6 teaspoons Garlic Powder
5 teaspoons Ground Lemon Pepper
5 teaspoons Onion Powder
2 teaspoons Ground Cayenne Pepper
2 teaspoons Paprika
2 teaspoons Ground Black Pepper
1 teaspoon Cumin
1 teaspoon Ground Basil
1 teaspoon Ground Oregano
1 teaspoon Sugar

Mix all the spices together in a bowl then ad the olive oil, red wine vinegar, and dry sherry and mix well.

Use an injector (large bore needle for cooking) and inject the turkey breast, legs, and wings in numerous spots. Use whatever is left of the mix as a rub and rub it all over the skin. Place in the refrigerator over night to let the spice soak in.

Heat the oil (preferably peanut oil) to 350 degrees. Slowly lower the turkey into the oil. Because the oil is so hot, you have to take your time lowering it so it doesn't boil over.

Once the turkey is in the oil, allow to cook 3-5 minutes per pound. Usuall a 12 pound turkey takes about an hour.

Remove from oil, let drain, then carve and serve. GOOD EATIN'!!!
