Don't we get to pick the direction that we want to go? How did they get the ball to start the half and put us against the wind in the 4th quarter? Did we choose to go that way.

No, defer means they get to choose either to take the ball first, or pick which endzone to defend first (thus giving us the ball first). They chose to defend whichever endzone they wanted, and we got the ball.

I think I goofed on how I was explaining that, maybe this will explain better.

Teams can now decide to "defer" on the coin flip. Before, the team winning the coin flip could only choose to kick or receive, or pick a goal to defend. Now they can defer, making the other team choose in the first half and reserving the right to decide opening the second half. Before if you won the toss and you chose to kick, the other team still got to choose which endzone to defend, so you were really hurting yourself with it, even now if you choose to kick "without defering" they still get to pick which endzone to defend.
