Interviewing an older coach: tips for the noob?

Occasionally my blog attracts folks with some credentials: coaches, professors, etc, and has allowed me to have conversations with folks like Chris Brown of Smart Football and Brian Burke of Advanced NFL Stats. But recently an older respected high school coach has started posting on my blog, and he wants to chat over the phone. I won't name him just yet, but he's a known expert on the ace formation and zone blocking, and he has sent me scans of some incredible correspondence between himself and Tom Landry, circa 1978.

I'm not a journalist, and know almost nothing about the formal interview process a journalist might engage in. For that matter, I've never even done a podcast in my life. So tips, advice, ideas, are all appreciated.

And to explain why the phone, as opposed to correspondence, older fella, with arthritic hands.
