Basically, your asking which current Cowboys are good enough to be on an all-time Cowboys team composed of starters only.

I can only think of three: Witten, TO and Ware.

I would not touch ware. I would consider keeping Witten. As for the rest we have had better at every position.

I would say for certain on Witten but mostly agree. Newman would probably make the cut but Ware and Witten are the best the 'Boys have had at those postions.

Ware and Witten.

I think Witten is better than Novacek. And Ware would technically be a linebacker not a defense end. If he were considered a DE, then I'd say Haley would be better than he. But as a linebacker, none of the other linebackers in Cowboys history was the all-around threat Ware is.
