Which right tackle (if any) in this league can stonewall him without needing help? Strief of the Saints maybe at 6'7 and 320 should have the size to do it.

Watt is a Wisconsin farm boy. How can he jump so high anyways?

Yep. Tyron is nice but Watt would have been a legendary Cowboy DT. Cowboys are known for their greats at the following positions:

QB: Meredith, Staubach, Aikman
RB: Dorsett, Emmitt
WR: Hayes, Pearson, Irvin
DB: Renfro, Harris, Green, Walls, Woodson, Sanders

But Dallas has had some of the best DTs ever in Lily and Manster. Watt would have been a fitting legacy to those guys. "What" next to "Where" would have been crazy, leaving opposing QBs crying "WHY".
