it has seemed, for the better part of the last 20 years, that Most players try to use the "I might sign with Dallas" as leverage to get a deal elsewhereand left without a contract, who has actually signed later? I can't think of any. I'm used to players coming in for a visit and the front office don't let them leave without them signing a contract. Can anyone think of anyone?

You’re 100% right. Coming in for interview doesn’t mean they’re sitting down speaking about the contract right away. Likely Lawyers and agents will review them once they leave the premises and speak on the phone.This is why social media kills the off-season.
It’s a process. Players don’t walk into the building usually and say “hey. Offer. I’ll take. Thank you”
They come, get offers, contemplate, discuss with family, then make decision.

We seem to forget sometimes that a visit doesn’t equate to an exclusive right to negotiate, and that team doesn’t have all the control. The players are shopping for the best fit and best deal, and to do that they have to look at options. Accordingly, to get the player to cut his shopping short it often takes overpaying.and left without a contract, who has actually signed later? I can't think of any.
