Opening day game - and good bars for country music

I am going to fly in with my girlfriend to see the opening day Sunday night game this year! I haven't been to Texas in almost 10 years and my girlfriend is a country girl. I'd like to turn this into a one week trip and hit every dive bar in North Texas - looking to get way off the beaten path outside of Dallas-Fort Worth and get a true Texas experience. Good bars in Dallas would also be appreciated.

Also - I know it's a bit early, but is anyone tailgating for the game? I plan to be early with lots of food, a grill, and a rented 4x4.
