Here is my analysis of the OTs. They're listed in order of the current NFLDS ranking.
It's difficult to put everything you see into a few sentences. I tried to start the description with primary thoughts when I watch the player.
The guys that I like that would be realistic options for the Cowboys are Moses, Turner and James. Moses looks like a safe 2nd round pick and James looks like a safe mid round pick. I really like the upside of Turner at either OT or possibly OG but he needs time to develop due to being a small school guy that didn't need much technique to dominant on that level.
Kouandjio is a wildcard. He was terrific in some games but had some struggles in others. His combine was terrible. There are reports about a knee issue which might explain the slow times and a better 2012 than 2013 season. If healthy, I think he would be a really good and nasty RT.
There are a couple of college LTs that are projected as Guards that are not in this list but I think might be able to play RT (Dozier, Thomas).

2 *Greg Robinson 6-5 332 Beast. Basically Tyron Smith type athleticism at 332 lbs. Explosive power, overwhelming size and terrific athleticism. Plays with good knee bend. Could use some technical refinement in the NFL, but he's going to be really good from day 1 even without perfect technique. Arm length 35".
3 Jake Matthews 6-5 308 Very well developed technically. Decent quickness. Decent size and power but not overwhelming. Biggest asset is that he's a ready now type player. Arm length is not great, 33-3/8".
9 Taylor Lewan 6-7 309 Big and strong with decent quickness. Somewhat aggressive. Appears awkward at times due to long legs, but can cover a lot of space in only a couple of steps. Biggest issue is holding, which he does a lot. They allow way more holding in college than in the NFL. Some really good college OLinemen struggle when they have to learn to play in the NFL without holding on every play. Arm length is not great, 33-7/8", but overall length is still very good considering his height of 6-7.
12 Zack Martin 6-4 308 Technically he's as good as it gets for a college Olineman. He is quick and strong but not a power drive blocker. At OT his wingspan is well under average. His best fit is at Guard in a Zone scheme, IMO. Arm Length 32-7/8".
35 *Cyrus Kouandjio 6-7 322 Powerful and aggressive player. I like his nastiness. Quickness is good but not elite. He's not a technician but he has solid fundamentals and good awareness. Will hold too much at times but doesn't appear to be reliant on it. Could be a dominant RT and possible LT in the NFL. Despite height, could probably play Guard in the beginning if it was a bigger team need. Long arms, 35-5/8". Medical=??
46 Morgan Moses 6-6 314 Big, wide, long armed OT with decent quickness. Good power. Awareness is good. Footwork and hand usage need refinement. He just so big and wide that he's difficult to get around. Arm length 35-3/8".
55 *Antonio Richardson 6-6 336 Inconsistent. This guy is hard to analyze. He looks really good sometimes, but he often fails from a number of different technique perspectives. He'll drop his head allowing an easy arm over by the defender. Hand usage is inconsistent. He does some kind of rapid pre-contact hand moving apparently trying to improve in this area. He holds much more than he will be allowed in the NFL. Sometimes becomes a waist bender or will let his pads get too high. He appears very strong in terms of holding his ground, but does not generate explosive power in run blocking. He seems to have enough quickness, but looks sluggish on occasion. His overwhelming size and long arms cover up for many of his mistakes. Misses most open field or 2nd level blocks. Arm Length 35".
61 Jack Mewhort 6-6 309 Consistent. Not a wow player, but consistently gets the job done. Good but not great quickness and power. Athleticism might be borderline as an NFL LT, but plays with great effort and good technique and awareness. Probably ready early but with limited upside. Arm length 34".
79 Billy Turner 6-5 315 Pow. He has this ability to really uncoil and explode into blocks. Moves effortlessly around the field for a 315 lb man. Good quickness. Good awareness, but a bit of a mess from a technique perspective. He looks like an OT, but I think he would be a terrific Zone blocking Guard with some time and Pro coaching. Fun to watch. High upside. Arm Length 34".
96 Joel Bitonio 6-4 302 Tenacity. Not the biggest or smoothest athlete, but just finds a way to win on just about every snaps run or pass. Very good hand, strong hand usage. Plays with good pad level and good overall technique. Has decent quickness but movements are somewhat herky-jerky. Not the most talented but I wouldn't bet against this guy. Arm length 33-7/8".
111 JaWuan James 6-6 311 Underrated. I guess the fact that he is a college RT has him rated this low. He is not a super elite athlete but he is a very smooth mover and light on his feet. The game almost looks easy for him even playing against the likes of Alabama. Uses his long arms well to keep defenders from getting into him. I don't see much not to like other than the obvious question of his ability to play LT. He can probably play RT from day 1. Arm length 35".
126 *Cameron Fleming 6-5 323 Meh. College RT that is a bit heavy legged. His technique is very inconsistent. He does many things wrong. Lacks great awareness, will duck his head or let his pad level get too high. Not a powerful run blocker despite having a thick base. Surprisingly underdeveloped considering that he's a big school player. Arm Length 34".
152 James Hurst (Injured) 6-5 296 Grinder. Just finds a way to get the job done. Awkward movement skills. Will probably need to move to RT in the NFL. Needs to gain weight. Go to move is the cut block. He throws more cut blocks in a game than most OL throw in a season. Arm length 33-3/4".
155 Charles Leno 6-4 303
Need works. Athleticism seems good enough. A bit undersized at his point. Technique needs a lot of work. Needs to get bigger and stronger. Arm length 34-3/8".
170 Michael Schofield 6-6 301
Solid but unspectacular. College RT. Athleticism is decent, but probably RT only. Strong enough to hold up in Pass Pro but not much push in run blocking. Solid against outside rushes. Needs to get bigger and stronger. Technique is good. Arm length 34".
190 Seantrel Henderson 6-7 331
Huge. Has a really large frame and wingspan. Very athletic, especially for such a large human. The 331 lbs at the combine is probably the least he's weighed since high school. His playing weight has been reported to be 345+. It's all about natural ability with minimal developed skill. His power is all about size but hand/arm strength is not what you would expect from a player this size. Mental-makeup is a huge question mark. If there was a MartyB knucklehead award for players with million dollar talent and a ten cent brain, he would get it. I think he's missed games every season due to some misconduct issue. Arm Length 34-5/8".
