Well, it's kinda funny. My buddy Mark, who brought the shrimp back w/ him from his 30-on, 30-off gig offshore, intended to peel and freeze these to have for his time off.

I bet him I could peel and de-vein all 5 lbs in under 30 mins, and if I did, they were mine.

Poor Mark. I kinda felt bad for him, as 22 mins later, he watched me slowwwwy finish shrimp #85.

Those do look good. My enbrochette are very similar. I use 16-20's as well, butterfly them and place a sliver of jalapeno in there with a small amount of Monterrey jack cheese. Wrap those babies tightly in bacon and either grill or fry them. I prefer a flash fry first then throw them on the grill for the flavor.

Serve them over a black bean sauce drizzled with a mornay sauce!

Looks larrupin good!!!!!! Will try this on the BGE, maybe with some wrapped dry scallops. Keep up the great recipes.

So, why don't you own a restaurant, DallasCowPoke? I bet even a small mom and pop restaurant would be a success with the food that you make!

I would love about 8 of those shrimps.
