Salsa Recipes for GameDay?

For those of you that make your own salsa, what are some good recipes for your favorite salsa?
 
My favorite salsa on the planet is the salsa from Chili's restaurant. I know - It's not anything exotic or particularly special, but out of all the salsa's I have tasted or made, it is my favorite. I have tried to find a copy-cat recipe for it, but the ones I have tried are not very close. To me it is the perfect blend of spicy/tangy/tomato/whatever. The restaurant near me will sell it in quantity, so I am just fine with that.
 
I've had some great salsas and picante sauce though it's one thing that I choose not to make. I just pick up Pace (we buy it by the half gallon jug because we eat so much of it) at the store and we're happy with it.

Gotta agree on the Chili's salsa. Good stuff. Its the best thing they serve IMO.

I still like to make my own somtimes tho.

I just throw in some roma tomatoes, onions, bell pepper, garlic, and cilantro in a food chopper. Then heat it a little in a saucepan. Salt to taste. No measurements. Grilling the vegetables beforehand can also add good flavor. But it is all healthier if you leave it raw with no heat.

I've got to agree with this. I hate Chilis as a whole, but do love their salsa and queso. I buy Mrs. Renfro's Habanero salsa at home. It's made in Ft. Worth and better than anything I've been able to make myself.
 
On the Boarder salsa is the best store bought that I've found. Here is a close copy of the recipe if you want to make it yourself:

2 large roma tomatoes, coarsely chopped
2 14.5 ounce cans diced tomatoes (Mexican style)
2 jalapenos, seeded and coarsely chopped
2 tablespoons red wine vinegar
1 tablespoon cumin, to taste
4 cloves garlic, minced
1 large vidalia onion, coarsely chopped
1/4 teaspoon salt, to taste
1/3 cup cilantro, coarsely chopped
1/2 teaspoon cayenne, to taste

I like to mix in a little habinaro sauce or salsa as well just to turn it up a notch.

Do you roast the tomatos/onion/jalapenos, or just make it raw? I heard that Chili's boils their onions before putting them in the salsa... just 2nd hand info, though. If anyone here has worked at chili's and knows how they make it, please PM me!
 
Why are you making salsa? So you can celebrate every time Victor Cruz does a TD? There should be NO SALSA on anyone's menu when we play the ginas. :D

I got some Mrs. Renfro's Ghost Pepper salsa for my B'day. It was smoking hot! Gave me the hiccoughs every time. Distinctively tasty too. I like Habenero sauces, so I may have to try their take on that as well.

I guess it depends on personal taste. Fresh is more crunchy. You can roast the peppers and unions before hand and then add them in. Or you can just heat up the whole lot of it after you've put it all together.
