why can't we convert him to TE with his size?

You already have that in Schultz.

Only Vasher can jump higher.

I watched Vasher extensively. I think he is what he is.
He is not a burner, nor a possession receiver like say a Michael Irvin.

He is a red zone threat who can outjump most players and can make highlight reel receptions.

If Dallas utilizes him as anything else, I suspect everyone will be frustrated by it.
As a #4 or #5 WR that is utilized primarily in the red zone.............

I think Dallas has a player that can carve out a role and be excellent at it, provided the expectations aren't that he will be a #1-#3 WR, but a specialist.

Vasher could be a very nice red zone option. I don't know if he grow enough in other areas to make an impact but his likeness at Texas Tech, Antoine Wesley, has become a boon for Arizona after a similar ignoble start.
